The 2023 Pinot Noir Blanc is a first for us at Dancing Water. Fully ripe Pinot Noir was hand harvested and whole bunch pressed, then the juice was settled, racked and tank fermented with an aromatic yeast strain. The wine was bottled early to capture as much freshness as possible.

The resulting wine is an absolute delight. It has the faintest pink tint which draws you to the glass. Aromatically, is possesses a wonderful strawberries and cream aroma that sees you heading back for another sniff. But wait, there’s more – a wave of white flowers and a hint of creamed chocolate. On the palate, it has that, oh-so-hard-to-achieve combination of gauzy delicacy and thought-provoking richness. The wine is dry and linear but also has weight and texture. It is wonderfully light on its feet but has the power to last and last.

We believe that our 2023 Pinot Noir Blanc is suited to all number of occasions. It is perfect as an apéritif, but serious enough to be partnered with a meal. Seafood and white meats would be perfect choices. This wine is already delicious, but will reward careful cellaring.
