The Red Onion Marmalade is a savoury preserve, created to accompany cheese, charcuterie ,cold cuts of meat and spiced dishes such as Asian curries. The preserve consists of chopped onion cooked in a sugar and vinegar syrup and given a slight set to texturize. The ROM is a pale reddish brown and can sit on a plate without seeping across the surface.
